When I disable a variant, I do not want it to be shown on the retail product page.

I turned off 1 variant but still shows on buy page

When you disable a variant it is still visible, but not purchasable on the retail product page. We are looking at changing this logic so that when you disable a variant it does not show up on the retail product page.
